This is true. With that said, a diligently maintained home network built out of hardware from a variety of manufacturers and time periods is leagues better than anything involving a blackboxed smartphone, when it comes to the threat of government backdoors.

Google pixel boot up with grapheneOS

Get yourself one of phones supported by the Graphene team which would be a google pixel. In my opinion it's the best phone you can get for better security and privacy, installation is super easy with their web installation tool which requires you to click a couple of buttons you just have to unlock the bootloader earlier but that’s all easy as well no technical knowledge required, that said you will have to spend some time learning how to use the system profiles,google sandboxing and other features etc.

I'd recommend that you watch mental outlaw on youtube he made a video on the installation process and you can learn a lot by watching his privacy videos

I would also recommend that you would leave your current iphone just in case if something wouldn't work or your mobile banking app is not supported or you don't know how to handle something in the system just so you won't get locked out.I believe stock iphone is better than stock android to answer your question, apple provides you with a lot of security but you have to remember that the system is closed source and you never really know for sure what's happening in the background.
