A bit about my background: I’ve worked in the hospitality industry my whole life and previously owned my own business, which I lost during a divorce. Due to my physical health, I can’t continue working in hospitality anymore.
I’m interested in transitioning into IT and would appreciate guidance on which certifications I should start with. I’m not aiming for a high-paying job—just something stable enough to cover my bills.

If you plan on transitioning into the IT sector then I would advise watching some YouTube videos and trying to complete some capture the flag competitions. I can personally advise network chuck for being a beginner friendly YouTuber alongside hack the box for capture the flags. I understand you mentioned you don’t want a high paying job which is why I suggest the 2 routes above as they will build the foundational knowledge in order for you to understand how a computer operates at its core. Additionally they include more complex material which if you decide to try and achieve a higher paying job grade either in the future or in the present then they can give you massive advantage in ensuring tou have a lomg an prospectus IT career
if you want to get into it start learning about linux and windows in high lvl, esspecially windows server.
learn about tools used by it teams usually, ticketing systems, whatever, you can check online easily on youtube or whatever.

this being said ill advice on going devops, its basically almost the same thing but you need to learn about cloud stuff, kubernetes and so on and will pay much more and is more interesting, you work with tech teams instead of people (big bonus for me)

not really, certifications are just money drainers, you don't need them 90% of the time(do take in mind that some workplaces might require certifications as a must, its really personal/company related).
not any specific courses, i will say start learning aws, they have a learning center and plenty of content, should also have learning subscriptions and free services(with limitations ofc) also you can learn gcp, but i think aws is the most used worldwide
