Finalize early means the money goes to the vendor immediately upon them accepting the order.
Escrow it sits in holding with the market until either a timer runs out (unless you dispute the order), or you confirm the order has been received. Sidenote, be sure to release funds upon receipt rather than waiting on the timer. Vendors don't like having their money tied up any longer than needed.
