personally i use proton, they have a pretty good reputation and are located in Switzerland which has pretty good privacy laws. but if you plan to do shady shi then pick your favorite programing language learning site and teach yourself python and create your own mailing service. or alternatively find one pre-made on GitHub to self host.

if you want maximum anonymity then the name of the game is self hosting and making it yourself.

I see that people think Protonmail is secure. I've seen screenshots showing that Protonmail closed access to the account and provided information to law enforcement in response to a law enforcement request. Be careful, nothing is secure unless the system belongs to you.
