This sort of depends on what it is you are building. For a DNM, for example, I would avoid a self hosted solution unless you somehow have access to the level of infrastructure and knowledge required to host something like that, securely.
Self hosting, let's say from a spare computer at your house, is not advised at all. Use a "privacy focused" VPS, and make sure you're covering your ass with good OpSec. If something gets shut down, jump down the list to another "privacy focused" VPS.
Bulletproof hosting is more or less a myth, nothing is bulletproof. And, as they say, if you're not being sold a product, you are the product. Nothing is free in life, don't take silly risks.
