For clients, Conversations (Android), Monal (iOS/macOS), and Gajim (Linux/Windows) are really good open source options.
Just make sure OMEMO is enabled for E2E encryption, and verify your contact's fingerprint through another trusted channel so you can be sure the connection is encrypted end to end.
