I've been wanting to begin using harder and longer passwords, including in my everyday, regular life. However, my gut tells me NOT to give my password to these sorts of services. Are they trustworthy? If so, which ones?

what about Bitwarden seems to be very transparent
If you really are concerned you can get a notebook and write them down there. No hackers can get your passwords if they're not on any kind of digital format.
Use Fully Offline Password Manager, Any Password Manager that doest Use Cloud Storage. There are many out there, implement also firewall in your devices, to filter out outgoing connections and see daily activity. If your using smartphone, if you hardeed it, theres a option to disable wifi and mobile data connection of App. Use app lock if possible to avoid external attack , If your really want to go deep use app lock, password manager built in locker, generate password and use PGP in your password, I mean if you generate a password using password manager, use PGP to encrypt it and post it in password manager, if you want to use password, theres many layer to access before copying the password. Using The PGP as last layer to decrypt. Its kinda hassle, but its so far its one the best way. And dont forget to hide the PGP App if you want a super duper security.
