I am looking to discuss the AI cameras filling the roads in the US. What is everyones moral and legal take on it? Besides an angle grinder and ir face blockers what is being done/can be done. Is this something that can be voted out or are we past that.
I don't think we're necessarily past the point where it can be voted out. All of this is still relatively new. That being said, the longer they are around, the more they will become integrated into the infrastructure, and more complex to remove.

You've got the wrong idea on how "democracy" works. There's never going to be a vote on whether or not the law or corporations can track your every move, they both benefit vastly from surveillance and it's big business.
These cameras are going to be everywhere soon, if they're not already installed in your city (in the US at least). Traffic cameras aren't new and LE have had 'em for years, but what Flock and others are offering them is a way to sort through all that data with AI and shit. There used to be a safety in numbers - if the cops weren't looking for you, you could blend into the millions of cars that are spotted on camera each day - but AI can help them turn hours of searching through camera footage into a few clicks. The main technology that these services offer are plate readers and a useful, searchable interface.
I think plate readers are the weakest link there. I don't know the exact details, but adversarial noise can supposedly mess those up and even give them false readings, all with a discreet pattern that's basically invisible to LE but potentially system-crashing for AI. I've seen artist add those adversarial noise patterns to their digital artwork so that it's unreadable to AI, so I figure it's the same idea. You could add that to your license plate holder, for example, and regain your anonymity (from our ChatGPT overlords, of course the pigs can still look up your plate number).

I am tempted to try frying the camera sensor by using a green laser pointer. I think everyone everywhere should carry them and fry every camera they come across.

There is a very good youtube video on the cameras that talks compiles security researchers findings on the devices. This covers physical, hardware, and software. I always recommend spray foam or an angle grinder.
How about a squirt-gun loaded with whatever chemical(hairspray attacks glass) reacts with the material acting as the shield for the lens? One of those plant misters set on stream will go about 12 feet. As kids we used to make surgical tube + pen end cap guns that would shoot 40 feet. Something to think about.
